Ingredients:

  • 2 cups (tea) of chopped pineapple in syrup (400gr)
  • 1 can of condensed milk
  • 1 cup (tea) fresh grated coconut – 80gr
  • 2 cups whole milk (480ml)
  • 4 units of egg
  • 1/2 cup (tea) butter at room temperature - 100 grams
  • 2 cups (tea) of sugar – 360gr
  • 2 cups (tea) of wheat flour – 240gr
  • 1/2 cup (tea) cornstarch
  • 1 tablespoon chemical baking powder

How to make?

  • Beat the yolks with the butter (reserve 1 tablespoon) and the sugar for 5 minutes.
  • Gradually add hot milk.
  • Add the sifted flour with the cornstarch and baking powder.
  • Stir together without beating, add the pineapple and beaten egg whites.
  • Gently mix until the dough is smooth.
  • Pour into a greased and floured form.
  • In a preheated oven at 180°C for 40 minutes or until a toothpick comes out clean.
  • Remove from the oven with the cake still hot (on the oven tray), make holes with a fork and pour into the condensed milk.
  • Cover the skillet and refrigerate for 2 hours.
  • Remove, cut and serve with coconut on top.

It is a real delight, serve with coffee.
